Jamaican Jerk Brine For Chicken, Pork .... Recipe

Ingredients
  • 4 lbs roasting chickens .
  • 1 tsp garlic powder .
  • 2 tbsps jamaican jerk spice .
  • 2 c hot water .
  • 1 c kosher salt .
  • 1 tsp onion powder .
  • 1/4 c brown sugar

Directions
  • Step #1 Dissolve salt & sugar in hot water add in the remaining ingredients & 2 c of ice cubes to cool it.
  • Step #2 Place a 4 lb cleaned & dried chicken in a freezer zip lock bag pour brine over chicken & top this with water to cover.
  • Step #3 Close bag trying to remove as much air as possible.
  • Step #4 Brine in refrigerator overnight 8-12 hrs.
  • Step #5 If not ready to cook remove this from brine rinse well & place back in the refrigerator till ready to cook.
  • Step #6 Proceed with cooking method you desire.
  • Step #7 Roast, Grill, Rotisserie cooking to internal temperature of 175.
  • Step #8 Let rest 10-15 mins before carving.
