Red Onion, Goat Cheese And Basil Tart Recipe

Ingredients
  • 1 large egg, beaten to mix .
  • 1/4 c purchased pesto sauce .
  • 3 tbsps olive oil .
  • 3 tbsps sliced fresh basil .
  • 8 oz soft fresh goat cheese (such as Montrachet) .
  • 1 sheet frozen puff pastry, thawed (half of 17 1/4-oz package) .
  • 2 medium red onions, unpeeled, each cut into 12 wedges .
  • 1/4 c whipping cream

Directions
  • Step #1 Preheat oven to 400°F Oil heavy large baking sheet.
  • Step #2 Toss onion wedges with oil in medium bowl.
  • Step #3 Spice up with salt & pepper.
  • Step #4 Arrange onions in single layer on baking sheet.
  • Step #5 Bake until bottoms of onions are golden & onions are very tender, about 25 mins.
  • Step #6 Transfer sheet to rack; cool.
  • Step #7 (Can be made 1 day ahead.
  • Step #8 Cover up & let this stand at about room temp.

  • Step #10 Preheat oven to 400°F Roll out pastry on lightly floured surface to 14x11-inch rectangle.
  • Step #11 Trim edges to even.
  • Step #12 Cut 1/2-inch strip from each side of pastry, forming 13x10-inch rectangle; reserve strips.
  • Step #13 Transfer pastry rectangle to another heavy large baking sheet.
  • Step #14 Brush edges with some of beaten egg; reserve remaining egg.
  • Step #15 Place strips on edges of tart, creating border.
  • Step #16 Trim strips; press carefully to adhere.
  • Step #17 Pierce bottom of pastry several times with fork.
  • Step #18 Bake until edges puff & pastry is golden brown, about 15 mins.
  • Step #19 Transfer baking sheet to rack.
  • Step #20 Using metal spatula, loosen pastry from baking sheet.
  • Step #21 Cool completely on sheet.
  • Step #22 Reduce oven temperature to 350°F.
  • Step #23 Stir cheese, pesto, cream & 2 tbsps basil in medium bowl until smooth.
  • Step #24 Spice up with salt & pepper.
  • Step #25 Mix in remaining beaten egg.
  • Step #26 Spread cheese mixture evenly over bottom of crust.
  • Step #27 Remove peel & stem end from roasted onions.
  • Step #28 Fan wedges, golden brown side up, over cheese mixture.
  • Step #29 Bake tart until crust is brown & cheese appears set, about 20 mins.
  • Step #30 Transfer baking sheet to rack & cool tart to about room temp.
  • Step #31 Sprinkle top tart with remaining 1 tbsp basil.
