Elegant French Toast With Maple-pecan Syrup Recipe

Ingredients
  • 2 tbsps butter (optional) or margarine (optional) .
  • grains salt (a few) .
  • FRENCH TOAST .
  • 1 1/4 c pitted tart red cherries, drained (canned or frozen) .
  • 1/2 c sliced pecans, toasted .
  • 1 sprig mint (optional) .
  • 1/4 c clover honey .
  • 1/4 c whipping cream .
  • 1/4 tsp ground cinnamon .
  • 1/2 tsp ground cinnamon .
  • 1 loaf unsliced egg bread, such as challah or other firm bread .
  • 1-2 tbsp butter or margarine .
  • 6 beaten eggs .
  • 1/2 tsp vanilla extract .
  • 6 oz cream cheese or mascarpone cheese, softened .
  • apples, sliced into thin wedges (optional) .
  • MAPLE-PECAN SYRUP .
  • 1 c maple syrup .
  • 2 tbsps sifted powdered sugar (optional) .
  • FOR GARNISH

Directions
  • Step #1 FRENCH TOAST:.
  • Step #2 Trim ends from the loaf of bread & cut the bread into six 1-1/2" thick slices.
  • Step #3 To make a pocket in each slice, beginning at the top, cut lengthwise in half to within 1" of the bottom.
  • Step #4 Set aside.
  • Step #5 In a small bowl, beat 3/4 c of cherries, cream cheese or mascarpone, whipping cream & 2 tbsps powdered sugar.
  • Step #6 If you like, with an electric mixer until well mixd.
  • Step #7 Spread about 1/4 c of the mixture into pocket of each slice of bread.
  • Step #8 Gently press pieces of bread together, distributing filling evenly inside pocket.
  • Step #9 Combine eggs, cinnamon & vanilla in a shallow dish.
  • Step #10 Dip bread into egg mixture to coat all sides.
  • Step #11 On a griddle or in a skillet, cook bread in hot butter or margarine over med-heat/flame for 2-3 mins on each side or until golden brown.
  • Step #12 Add more butter or margarine, if needed.
  • Step #13 Remove from heat & cut French toast in half diagonally, forming two triangles.
  • Step #14 Place three triangles for each serving on warm plates.
  • Step #15 Sprinkle top with extra powdered sugar & remaining cherries.
  • Step #16 MAPLE-PECAN SYRUP:.
  • Step #17 Melt butter or margarine, add nuts; brown lightly: remove nuts.
  • Step #18 Add maple syrup, until slightly thickened, cinnamon & salt to butter in saucepan over med-heat/flame, stirring often, honey, about 10 mins.
  • Step #19 Remove from heat & stir in the pecans & cinnamon.
  • Step #20 Let cool; mixture will thicken as it cools.
  • Step #21 Serve the french toast with warm syrup & slices of apple on to, or with powdered sugar.
  • Step #22 *If you choose you can sub any kind of fruit.
