Crab Stuffed Potatoes Recipe

Ingredients
  • 1/4 tsp pepper
  • 1/4 c butter or margarine
  • Paprika
  • 1 (6 oz) can crabmeat - drained, flaked & cartilage removed or imitation crabmeat
  • 1 tsp salt
  • 4 medium baking potatoes
  • 1/4 c finely sliced green onions or chives
  • 1 c shredded Cheddar cheese
  • 1/4 c light cream

Directions
  • Step #1 Bake potatoes at 425F degrees F for 45-55 mins or until tender.
  • Step #2 When cool enough to handle, halve potatoes lengthwise.
  • Step #3 Carefully scoop out pulp into a bowl, leaving a tin shell.
  • Step #4 Set shells aside.
  • Step #5 Beat or mash potato pulp with butter, cream, salt & pepper until smooth.
  • Step #6 Using a fork, stir in the onions or chives & cheese.
  • Step #7 Gently mix in crab.
  • Step #8 Stuff shells.
  • Step #9 Sprinkle top with paprika.
  • Step #10 Return to the oven for 15 mins or until heated through.
