Pasta With Spinach, Chickpeas, Tuna, And Feta Recipe

Ingredients
  • 4 c coarsely sliced spinach .
  • 60 g feta cheese, crumbled (I prefer goat or sheep feta) .
  • 2 tbsps olive oil .
  • salt & pepper, to taste .
  • 1 (400 g) can chickpeas, rinsed & drained .
  • 2 garlic cloves, crushed .
  • 1 (280 g) can tuna in water, drained .
  • 250 g whole wheat pasta (I use wholemeal spirals) .
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 Cook pasta according to instructions.
  • Step #2 Place washed & sliced spinach in a strainer, strain hot pasta over spinach.
  • Step #3 Combine all other ingredients In a large-ish serving bowl, stirring to mix.
  • Step #4 Pour pasta & spinach into bowl, mix thoroughly.
