Lemon Or Lime Marmalade Recipe

Ingredients
  • 12 c cold water .
  • 12 c sugar .
  • 10 lemons

Directions
  • Step #1 With a sharp paring knife remove the outer peel of the lemons, you do NOT want any pith.
  • Step #2 Slice the peel into paper thin slivers & set aside.
  • Step #3 Remove pith from fruits & slice the lemons as thin as you can, removing any seeds.
  • Step #4 Dont use the end slices.
  • Step #5 Measure the peel & lemon slices, you will need 4 c.
  • Step #6 Place In a large-ish non-reactive bowl-I use glass, & cover with the 12 c water.
  • Step #7 Cover up & let this stand overnight.
  • Step #8 The next morning place the lemon/water mixture into a large pot over med-heat/flame & cook, covered, for 20 mins or until the lemon rind is tender.
  • Step #9 Remove from heat & measure-you should have 12 c.
  • Step #10 Return to pot & measure in 12 c of sugar.
  • Step #11 Cook over med-heat/flame, stirring constantly until the sugar dissolves.
  • Step #12 Turn heat up to medium high, bringing product to a gentle boil-still stirring constantly.
  • Step #13 Boil to gel point.
  • Step #14 Remove from heat & skim off foam.
  • Step #15 Ladle into clean hot jars, leaving 1/4 inch head space.
  • Step #16 Process in a boiling water bath for 10 mins at altitudes up to 1000 feet.
