Beer And Cheddar Soup Recipe

Ingredients
  • 1 c thinly sliced celery .
  • 1 c shredded carrots .
  • 1/4 tsp ground black pepper .
  • 1/3 c all-purpose flour .
  • 4 c shredded sharp cheddar cheese (1 lb.) .
  • 3 c milk .
  • 2 1/2 tbsps instant chicken bouillon granules .
  • 2/3 c thinly sliced onions .
  • 1 tsp salt .
  • 2 1/2 c beer (about 20 oz.)

Directions
  • Step #1 In a 3 quart saucepan, mix beer & bouillon powder or granules.
  • Step #2 Cook over med-heat/flame stirring frequently, until dissolved.
  • Step #3 Add carrot & celery.
  • Step #4 Separate onion into rings; add to beer mixture.
  • Step #5 Bring to a boil.
  • Step #6 Reduce heat.
  • Step #7 Simmer, covered, 10 mins Place flour in small bowl.
  • Step #8 Gradually stir or whisk in 1 1/2 c milk until smooth.
  • Step #9 Gradually stir in theto soup until mixed.
  • Step #10 Stir remaining 1 1/2 c milk into soup.
  • Step #11 Cook, until thickened, stirring frequently, about 15 mins.
  • Step #12 Add cheese a little at a time, stirring after each addition, until cheese melts.
  • Step #13 Add salt & pepper.
  • Step #14 Cook 1 min; do not boil.
  • Step #15 Serve as soon as possible.
