White Chocolate Raspberry Cookies Recipe

Ingredients
  • 1/2 tsp shortening .
  • 2 eggs .
  • 8 oz white chocolate baking bar .
  • 1/4 tsp salt .
  • 3 oz white chocolate baking bar .
  • 1 tsp baking soda .
  • 1 c sugar .
  • 1/2 c butter, softened .
  • 1/2 c seedless raspberry jam .
  • 2 3/4 c all-purpose flour

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Chop 4 oz of white chocolate in small pieces & set aside.
  • Step #3 Over a double boiler, melt 4 oz of chocolate; set aside to cool.
  • Step #4 Combine the butter, sugar, salt & baking soda In a large-ish mixing bowl; cream until fluffy.
  • Step #5 Add the eggs & melted white chocolate; mix well.
  • Step #6 Gradually add in the flour & mix well.
  • Step #7 Stir in the 4 oz of sliced white chocolate.
  • Step #8 Drop rounded tspfuls of dough 2" apart on a greased cookie sheet.
  • Step #9 Bake for 7-9 mins or until the cookies are lightly browned.
  • Step #10 Cool for 1 min on the baking sheet before moving to a cooling rack.
  • Step #11 Make a small indentation in the center of each cookie & spoon on a small amount of jam.
  • Step #12 Combine 3 oz of white chocolate & the shortening in a double boiler; melt & drizzle a small amount on each cookie.
  • Step #13 The cookies can be put in the fridged 10-15 mins to help the chocolate set.
