Greg's Monterey Jack Recipe

Ingredients
  • paprika, pinch (optional) .
  • 1 (14 1/2 oz) can kidney beans, undrained .
  • salt & pepper, to taste .
  • 1/4 c sliced green bell peppers (optional) .
  • 1/2 c sliced sweet onions .
  • 1 lb lean ground beef .
  • 2 (14 1/2 oz) cans Italian-style stewed tomatoes, undrained .
  • 1 c shredded monterey jack cheese .
  • 2 tbsps butter

Directions
  • Step #1 Saute the sliced onions & bell peppers in a medium frying pan with the butter until the onions are translucent, about three mins.
  • Step #2 Add the ground round & cook this until not pink.
  • Step #3 Remove any fat by tilting the pan & soaking up the fat with a wadded paper towel.
  • Step #4 In a large saucepan, mix the kidney beans, stewed tomatoes & the cooked ground round mixture.
  • Step #5 Simmer over med-heat/flame for 10 or 12 mins, until hot.
  • Step #6 Ladel into (heated) soup bowls.
  • Step #7 Top with shredded Monterey Jack cheese, sprinkle with a pinch of paprika (optional) & serve.
