1 (15 oz) can black beans (rinsed & well drained) .
2 c frozen corn .
TOPPINGS .
1 1/2 lbs ground beef .
1 green bell pepper, seeded & sliced .
coarsley crushed tortilla chips .
1 large jalapeno pepper, seeded & finely sliced (optional) .
1-2 tbsp fresh minced garlic .
sour cream .
9 corn tortillas .
2 c shredded Mexican mix cheese, divided (can use more or less) .
salt & black pepper
Directions
Step #1 Set oven to 350 degrees.
Step #2 Grease an 11 x 7-inch baking dish.
Step #3 In a large skillet brown the ground beef with onion, green bell pepper & jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet & add in one can of enchilada sauce, black beans, garlic, corn & cumin.
Step #4 Bring the ground beef mixture to a boil; reduce heat to medium-low & let simmer for 20-25 mins stirring every once in awhile, then season this with salt & lots of black pepper.
Step #5 Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
Step #6 Spread 1/4 c canned enchilada sauce over the tortillas in the baking dish.
Step #7 Cover up the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
Step #8 Repeat the layers twice but omitting the final cheese layer on top.
Step #9 Drizzle any remaining canned enchilada sauce (from the second can) on top.
Step #10 Cover up with foil wrap & bake in a 350 degree oven for 25 mins.
Step #11 Remove foil wrap & sprinkle with more cheese (any amount desired) then return to oven & bake for another 5 mins or until the cheese has melted.
Step #12 Let stand 10-15 mins before sluicing.
Step #13 Top with sour cream and/or tomatoes, green onions & crushed tortilla chips if desired.
