Spiced Lemon-pear Marmalade Recipe

Ingredients
  • 1 piece ginger, 4 x 1 inch, peeled & sliced .
  • 1 tsp whole cloves .
  • 3 cardamom pods .
  • 8 large firm pears, peeled, cored, & grated (about 2 quarts grated) .
  • 8 whole black peppercorns .
  • 3 medium thin-skinned lemons .
  • 5 c sugar .
  • 1 tbsp chunk cinnamon .
  • 6 whole allspice .
  • 1/2 c water

Directions
  • Step #1 Place spices in a tea ball or tie up in a cheesecloth bag.
  • Step #2 Process ginger & water in mixer until pureed.
  • Step #3 Strain well through a fine sieve, pressing down to get as much liquid as possible.
  • Step #4 Discard the ginger & reserve the liquid.
  • Step #5 Take two of the lemons & quarter lengthwise.
  • Step #6 Slice the white pith off the core of each piece & remove the seeds.
  • Step #7 Slice each piece crosswise as thinly as possible, preferably with a mandoline.
  • Step #8 Grate the zest from the remaining lemon & squeeze the juice from it.
  • Step #9 Place all ingredients In a large-ish non-reactive pan & bring up to a boil.
  • Step #10 Reduce heat & let simmer until lemon peel is translucent, about 1 hr.
  • Step #11 Remove spice bag & discard spices.
  • Step #12 Pack marmalade into hot sterilized jelly jars.
