Spicy Parsnip And Carrot Soup Recipe

Ingredients
  • 1 tbsp curry powder .
  • 450 g parsnips .
  • 300F ml skim milk .
  • salt & pepper .
  • 1 onion .
  • 2 tbsps olive oil .
  • 350 ml vegetable stock .
  • 225 g carrots

Directions
  • Step #1 Peel & finely chop the onion.
  • Step #2 Peel & cut parsnips & carrots into evely sized pieces.
  • Step #3 Heat the oil in a saucepan & add the vegetables, coat with oil,and cook for a few mins until they start to soften.
  • Step #4 Add the curry powder & cook, stirring, for a min.
  • Step #5 Stir in the stock & milk.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Bring to the boil then reduce heat to a gentle simmer.
  • Step #8 Cook for 15-20 mins until vegetables are soft.
  • Step #9 Allow to cool a little, & then puree in a mixer or food processor/blender until smooth.
  • Step #10 If it's too thick for your liking add more stock.
  • Step #11 Reheat carefully to serve.
