Lamb Shoulder Chops Pizzaiola Recipe

Ingredients
  • 1 (12 oz) can tomatoes, crushed .
  • For the lamb preparation .
  • 4 tbsps olive oil .
  • 1/2 c onions, sliced .
  • 1/4 tsp pepper .
  • 4-6 shoulder lamb chops, one per person .
  • 1 c white wine .
  • salt, to taste .
  • 1 pinch cayenne pepper .
  • 6 garlic cloves, sliced .
  • 1/2 tbsp paprika .
  • 3 tbsps tomato paste .
  • 1/4 tsp dried oregano .
  • 1 c flour .
  • 4-6 slices mozzarella cheese, one slice per person .
  • for the seasoned flour

Directions
  • Step #1 Prepare seasoned flour by mixing all flour ingredients together in a bowl.
  • Step #2 Cover up chops with the seasoned flour.
  • Step #3 Heat 3 of the tbsps olive oil in a sillet & brown chops on both sides.
  • Step #4 Remove browned chops to a plate & discard fat left in skillet.
  • Step #5 To skillet, add the remaining 1 tbsps oil & heat it.
  • Step #6 Add tomato paste, onions, garlic & saute for 2-3 mins.
  • Step #7 Add white wine, crushed tomatoes & oregano.
  • Step #8 Return chops to skillet, cover & braise over low heat/flame for 45 mins or until tender.
  • Step #9 Remove chops, top this with cheese & keep warm in oven until melted.
  • Step #10 Serve immediateley.
