Ingredients
1 large yellow onion, trimmed, peeled, & cut into 6 wedges .
40 garlic cloves, seperated but not peeled .
1 1/2 tsps olive oil .
3 1/2 c chicken stock .
2 garlic cloves, peeled & thinly sliced .
1 tbsp olive oil .
1 1/2 tsps coarse salt .
1 large russet potato, peeled & cut into 1/2 inch cubes .
fresh ground pepper .
6 slices whole wheat baguette, toasted, for garnish .
1 tsp fresh lemon juice .
4 fresh sage leaves .
snipped fresh chives, for garnish
Directions
Step #1 Preheat oven to 400F degrees.
Step #2 Toss whole garlic cloves, onion, 1 tbs oil, potato, 1 tsp salt, sage, & a pinch of pepper In a large-ish ovenproof skillet.
Step #3 Cover up & transfer to oven.
Step #4 Roast, stirring every once in awhile, 30 mins.
Step #5 Meanwhile, make the garnish: put the remaining 1 1/2 tsp oil & the sliced garlic into a small skillet.
Step #6 Cook over low heat/flame, until garlic is browned but not burned, swirling skillet every once in awhile, about 20 mins.
Step #7 Using a slotted spoon, transfer garlic slices to paper towels to drain.
Step #8 Remove skillet from oven, & stir in the 1/3 c of water.
Step #9 Cover up, & return to oven; roast until potato is deep golden brown & garlic & onion are very soft, about 20 mins.
Step #10 Transfer garlic cloves to a plate, & let cool slightly.
Step #11 Squeeze garlic from skins into skillet; discard skins.
Step #12 Heat skillet over medium-high heat.
Step #13 Add sherry, & cook, stirring to scrape up browned bits, 1 min.
Step #14 Add stock & 1/2 c water, & bring to a simmer.
Step #15 Remove from heat, & let cool slightly.
Step #16 Puree vegetable mixture in a mixer.
Step #17 Press through a fine sieve into a medium saucepan.
Step #18 Heat over low heat/flame; stir in the lemon juice, remaining 1/2 tsp salt, & 1/4 tsp pepper.
Step #19 Divide into bowls & garnish with toasted baguette slices, fried garlic, & chives.
