Brown Rice Stir-fry With Flavored Tofu And Vegetables Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 1 pinch red pepper flakes (optional) .
  • 2 tbsps olive oil .
  • 1 tsp toasted sesame oil .
  • 8 oz flavored baked tofu (cut into 1-inch cubes) .
  • 1 medium yellow bell pepper, cut into 1-inch chunks .
  • 1 medium red bell pepper, cut into 1-inch chunks .
  • 3 tbsps reduced sodium soy sauce .
  • 3 c cooked brown rice .
  • 1 piece fresh ginger, peeled & finely sliced .
  • toasted sesame seeds (optional) .
  • coarse salt, to taste .
  • fresh ground black pepper, to taste .
  • 3 scallions, halved lengthwise & thinly sliced

Directions
  • Step #1 In a large skillet or wok, heat the olive oil over medium-high heat.
  • Step #2 Add garlic, & red pepper flakes (if using); stir-fry until fragrant, ginger, about 30 seconds.
  • Step #3 Add tofu; stir-fry until golden brown, about 2 mins.
  • Step #4 Add red & yellow peppers; cook, stirring, until peppers are crisp-tender, about 3 mins.
  • Step #5 Add rice & soy sauce; cook, until rice is heated through, stirring every once in awhile, about 3 mins.
  • Step #6 Stir in sesame oil & sesame seeds, if using.
  • Step #7 Spice up with salt & pepper; garnish with scallions.
  • Step #8 Serve hot.
