Country Pound Cake Recipe

Ingredients
  • 1 tsp lemon extract
  • 3/4 tsp baking powder
  • 2 2/3 c white sugar
  • 1 c milk
  • 1 c unsalted butter, softened
  • 5 eggs
  • 1/2 c shortening
  • 1 tsp vanilla extract
  • 3 c all-purpose flour
  • 1/4 tsp salt

Directions
  • Step #1 Do not preheat the oven.
  • Step #2 Grease 10 inch tube pan & line bottom with wax paper or parchment paper.
  • Step #3 Sift together the flour, baking powder & salt.
  • Step #4 Set aside.
  • Step #5 In a large bowl, shortening, beat the butter, & sugar on lowish speed for 10 mins.
  • Step #6 Add the eggs one at a time, mixing well after each addition.
  • Step #7 Alternately add the flour mixture & milk, mixing well.
  • Step #8 Add the vanilla & lemon extracts.
  • Step #9 Pour batter into the prepared pan.
  • Step #10 Set the oven temperature to 350 degrees F (175 degrees C.
  • Step #11 Bake for 1 hr & 20 mins, or until a toothpick inserted into the middle of cake comes out clean.
  • Step #12 Allow cake to cool in the pan for 1 hr.
  • Step #13 Remove to a cake rack & cool for at least 3 hrs.
