Strawberry-rhubarb Irish Crumble With Irish Whiskey Butter Recipe

Ingredients
  • 3 c sliced rhubarb, about 1/3-inch thick .
  • 5 c quartered strawberries .
  • 1 pinch salt .
  • 2/3 c packed light brown sugar .
  • 1/4 c cornstarch .
  • 6 tbsps unsalted butter, sliced (cold) .
  • 3/4 c old fashioned oats .
  • 3/4 c flour .
  • 1 tsp fresh lemon juice .
  • 1/2 c sugar

Directions
  • Step #1 Irish whiskey butter: place 1/2 c of room temperature unsalted butter in a mixing bowl & whip until fluffy.
  • Step #2 With mixer running, slowly add 3/4 c powdered sugar.
  • Step #3 Slowly add 1/4 c Irish whiskey until mixd.
  • Step #4 Mixture may look separate & curdled at first, but if you keep whipping, it will come together.
  • Step #5 Use at about room temp or chilled.
  • Step #6 Preheat oven to 365 degrees.
  • Step #7 Lightly grease 11x7" baking dish & set aside.
  • Step #8 In a medium bowl, rhubarb, mix strawberries, sugar, cornstarch, & lemon juice.
  • Step #9 Toss to coat.
  • Step #10 Pour strawberry mixture into prepared baking dish.
  • Step #11 In a medium bowl, oats, light brown sugar, & salt, add the flour, stirring to mix.
  • Step #12 Add the sliced butter to the flour mixture, & using your fingers, work the mixture until it resembles coarse crumbs.
  • Step #13 Pour crumb mixture evenly over top of strawberry mixture.
  • Step #14 Place baking dish in the oven & bake for 40 mins, or until filling is bubbly & topping is golden brown.
  • Step #15 Serve warm with spoonful of Irish Whiskey Butter.
