Easy Roasted Butternut Squash Recipe

Ingredients
  • 16-20 oz butternut squash, peeled & cubed .
  • 1 tsp ground cinnamon .
  • 1/2-1 tbsp vegetable oil .
  • 1 tsp real maple syrup

Directions
  • Step #1 preheat the oven to 450 degrees F.
  • Step #2 peel & cube the butternut squash (this step disappears if you can buy it already peeled & cut either in half or cubed).
  • Step #3 toss the squash in a bowl with 1/2 - 1 Tbsp oil (I use light olive oil or Enova), 1 tsp ground cinnamon & 1 - 2 tsp maple syrup.
  • Step #4 pour everything into a baking pan & roast until done - about 30 - 40 mins.
  • Step #5 If you have the oven on lower it will, obviously, just take a little longer! When it's done it is soft & steamy & sweet.
  • Step #6 You can also mash this, if you like, adding a little margarine or butter to taste.
  • Step #7 Once you try this, you can decide if you want to use another tsps of maple syrup.
  • Step #8 If you don't have syrup, brown sugar (or lite brown sugar) would work too.
  • Step #9 I have not tried the new Spenda Brown sugar yet.
