Rice And Beans Recipe

Ingredients
  • 1 (8 oz) can tomato sauce .
  • 1/2 c fresh cilantro .
  • 1 c onions, sliced .
  • 1 (15 1/2 oz) can black beans .
  • mozzarella cheese .
  • 2 garlic cloves, sliced .
  • 2-3 c cooked rice .
  • crushed red pepper flakes .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 1 c celery, sliced .
  • 1-2 tbsp olive oil

Directions
  • Step #1 In large skillet, warm oil over med-heat/flame.
  • Step #2 Sauté garlic & onion until golden.
  • Step #3 Add celery & continue to fry for a couple mins.
  • Step #4 Add sliced tomatoes & tomato sauce until mixture simmers.
  • Step #5 Add black beans & continue to heat for several mins.
  • Step #6 Add cilantro & red pepper flakes (to taste).
  • Step #7 I use more than 1/2 c cilantro & I add a fair amount of red pepper flakes -- but I think my taste buds may be out of whack.
  • Step #8 Mix in cooked rice.
  • Step #9 Top with mozarella cheese (to taste).
