Coconut Lime Bars Recipe

Ingredients
  • 1/8 tsp salt .
  • 4 eggs .
  • 4 tbsps sugar .
  • 1 c almonds, sliced (or substitute pecans, walnuts or nut of your choice) .
  • 2 1/2 tbsps butter or margarine .
  • 1 1/2 c powdered sugar .
  • 1/4 lb butter or margarine, plus .
  • Bars .
  • 3 c sweetened flaked coconut .
  • 2 c flour .
  • 2 tsps lime zest .
  • 2 tbsps fresh lime juice .
  • Glaze .
  • 2 c light brown sugar, firmly packed

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Combine flour, sugar, & salt in a bowl.
  • Step #3 Cut in margarine until mixture resembles coarse meal.
  • Step #4 Press crust into ungreased 10 by 15-inch baking pan.
  • Step #5 Bake for 15 mins or until golden brown.
  • Step #6 Beat eggs in a medium bowl until frothy; add nuts, brown sugar, & coconut & mix well.
  • Step #7 Spread mixture over baked crust.
  • Step #8 Bake an extra 30 mins or until set.
  • Step #9 While still warm, loosen the edges with a metal spatula.
  • Step #10 Mix together the powdered sugar, lime juice, & zest with a fork.
  • Step #11 Working quickly, spread the glaze all over the top this with a spatula while still warm (Very important! It won't spread easily after it cools.
  • Step #12 The alternative is to double the glaze).
  • Step #13 Let cool to about room temp & cut into bars.
  • Step #14 Cut 11 cuts crosswise & 3 cuts lengthwise.
