Sauteed Brussels Sprout Leaves Recipe

Ingredients
  • 1 garlic, finely choppped .
  • salt & pepper .
  • 1 tbsp lemon juice or balsamic vinegar .
  • 2 lbs Brussels sprouts, halved & broken apart into leaves .
  • 2 tbsps capers, rinsed & drained .
  • 1/4 c water .
  • 2 tbsps parsley, sliced .
  • 2 tsps olive oil

Directions
  • Step #1 Heat oil in a wok or large, deep skillet on medium high heat.
  • Step #2 Add garlic & cook carefully until fragrant -- about 1 min.
  • Step #3 Add sprout leaves & cook for 1 min.
  • Step #4 Add water & bring to a boil.
  • Step #5 Cook, stirring for 2 - 3 mins, or until water evaporates.
  • Step #6 If capers are large, coarsely chop.
  • Step #7 Stir in capers, parsley & lemon juice.
  • Step #8 Add salt & pepper to taste.
