Ingredients
  • 8 oz 2% fat cottage cheese .
  • 1 tbsp margarine, melted .
  • 2 tbsps water .
  • 1/4 c sifted unsweetened cocoa .
  • 1 large egg .
  • 8 oz ricotta cheese .
  • Topping .
  • 1 tsp vanilla .
  • 2 tbsps granulated sugar .
  • 1 c granulated sugar .
  • Crust .
  • 1 tbsp all-purpose flour .
  • 1 c light sour cream .
  • 1 1/2 c graham cracker crumbs or chocolate wafer crumbs .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat oven to 350F & spray an.
  • Step #2 8-inch springform pan with.
  • Step #3 nonstick vegetable spray.
  • Step #4 Crust: In bowl, mix crumbs, water & margarine; mix well.
  • Step #5 Pat onto bottom & sides of springform pan.
  • Step #6 Refrigerate.
  • Step #7 In food processor/blender, sugar, mix ricotta & cottage cheeses, egg & vanilla; process until smooth.
  • Step #8 Add cocoa & flour; process just until mixd.
  • Step #9 Pour into.
  • Step #10 pan & bake for 30 mins or until set around edge but still slightly loose in centre.
  • Step #11 Topping: Meanwhile, stir this together sour cream, sugar & vanilla; pour over cheesecake.
  • Step #12 Bake for 10 more.
  • Step #13 mins.
  • Step #14 (Topping will be loose.
  • Step #15 ) Let cool & put in the fridge for at least 3 hrs or until set.
