Vegan Oatmeal Peanut Butter Chocolate Chip Cookies Recipe

Ingredients
  • 3 c quick-cooking oats .
  • 2 c sugar .
  • 1 1/2 c peanut butter .
  • 1/2 tsp cinnamon .
  • 1 tsp salt .
  • 2 tsps baking soda .
  • 1/2 c unsweetened applesauce .
  • 1 1/2 c semi-sweet chocolate chips .
  • 2 tsps vanilla .
  • 2 c whole wheat pastry flour .
  • 1/2 c canola oil .
  • 6 oz lite silken firm tofu .
  • 4 tsps molasses .
  • 1/4 c soy milk lite

Directions
  • Step #1 In a medium bowl, baking soda, oats, sift together whole wheat pastry flour, salt & cinnamon.
  • Step #2 In a seperate large bowl, cream together peanut butter & sugar with a spatula until well mixd, 3 - 5 mins.
  • Step #3 In a mixer, add applesauce, crumble the tofu in, soymilk & oil.
  • Step #4 Whiz on high until completely smooth.
  • Step #5 Add this mixture to the sugar mixture & cream together until well mixd.
  • Step #6 Beat in the molasses & vanilla.
  • Step #7 Fold in the oats/flour mixture.
  • Step #8 Drop by rounded spoonfulls onto an ungreased cookie sheet.
  • Step #9 Flatten the tops by lightly pressing with a fork in a criss cross pattern.
  • Step #10 Bake for 15 mins.
