Red Beans & Rice Recipe

Ingredients
  • 1/2 c salsa .
  • 2 stalks celery, sliced .
  • 1 (20 oz) can red kidney beans, drained & rinsed .
  • 1 dash salt .
  • 3 dashes piri-piri, sauce or your favorite hot sauce .
  • 1 tbsp honey (optional) or brown sugar (optional) .
  • 6 garlic cloves, sliced .
  • 1 small onion, sliced .
  • 1 tsp olive oil .
  • 2 c water .
  • 1 c rice, raw .
  • 1 green pepper, sliced .
  • 1 tbsp cumin

Directions
  • Step #1 Prepare rice as per usual.
  • Step #2 I always boil up 2 c of water & then add in the rice.
  • Step #3 I keep the lid on & let simmer on low heat for 5 mins or so & then I turn off the heat & forget about it.
  • Step #4 Just don't open the lid as the steam makes everything perfect! Heat up a large cast iron pan with the olive oil.
  • Step #5 Add in the onions, green peppers, celery, garlic, & crushed dried chilis.
  • Step #6 Throw in a dash of salt to help the juices flow & stir until everything gets wilty.
  • Step #7 Next, add in the kidney beans, spices & salsa & stir about until everything is mixd & heated through.
  • Step #8 Taste to adjust spices & add in the rum & the honey if needed.
  • Step #9 Simmer for a few mins & then serve in deep bowls on top of the rice.
