Curried Chicken Recipe

Ingredients
  • Hot cooked noodles or rice (optional)
  • 1 medium onion, finely sliced
  • 2 tbsps butter or stick margarine
  • 1 (4 oz) can mushroom stems & pieces, drained
  • 1 c frozen peas
  • 2 tsps curry powder
  • 1 (10.75 oz) can reduced-fat, reduced-sodium cream of mushroom soup, undiluted
  • 1 1/2 lbs skinless, boneless chicken breast meat - cubed
  • 2 c finely sliced peeled apples
  • 1/2 c fat-free milk
  • 1/8 tsp paprika

Directions
  • Step #1 Place butter in a 2-1/2-qt.
  • Step #2 microwave-safe dish.
  • Step #3 Cover & microwave on high for 40-50 seconds or until melted.
  • Step #4 Stir in curry powder.
  • Step #5 Add onion & apple; stir until coated.
  • Step #6 Cover & microwave on high for 2-3 mins or until crisp-tender, stirring once.
  • Step #7 Stir in the soup, chicken & mushrooms; cover & microwave on high for 9-10 mins or until chicken is no longer pink, milk, stirring twice.
  • Step #8 Add peas; sprinkle with paprika.
  • Step #9 Cover & cook 3-4 mins longer or until peas are tender.
  • Step #10 Serve over noodles if desired.
