Chinese Shrimp And Tofu Soup Recipe

Ingredients
  • 1/3 c frozen peas, thawed
  • 8 oz tofu, sliced small
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 (1/2 inch) piece fresh ginger root, minced
  • 1 quart chicken stock
  • 6 oz raw small shrimp, shelled & deveined
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions
  • Step #1 Heat the oil in a large saucepan or wok over high heat.
  • Step #2 Cook the garlic & ginger until fragrant & lightly browned.
  • Step #3 Stir in the shrimp, & stir fry until cooked, then remove & set aside.
  • Step #4 Pour in the chicken stock & bring to a boil.
  • Step #5 Reduce heat to medium, season this with salt & pepper, add the tofu & peas, then return to a simmer.
  • Step #6 Mix the cornstarch with a little water to form a thin paste.
  • Step #7 Stir the cornstarch into the soup & continue to simmer until clear & thickened, about 1 min.
  • Step #8 Stir the shrimp back into the soup & serve.
