Smoked Salmon Recipe

Ingredients
  • 1/2 lb smoked oysters .
  • 1/2 lb smoked salmon .
  • 4 slices bacon, sliced .
  • 2 1/2 tsps water .
  • 1 c vegetable oil .
  • 2 1/2 tbsps lemon juice .
  • 1 bunch watercress .
  • 6 egg yolks

Directions
  • Step #1 Fry the sliced bacon bits until crisp.
  • Step #2 Drain & set aside.
  • Step #3 Slice the salmon thinly & roll this into tight fingers.
  • Step #4 Arrange the salmon & oysters attractively on a bronze serving platter (or platter of your choice).
  • Step #5 In a mixer or food processor/blender, beat the egg yolks & water.
  • Step #6 With the machine running on lowish speed, slowly add the vegetable oil & lemon juice, beating until smooth & creamy.
  • Step #7 Blanch the watercress in boiling water for a few seconds, then, drop into mixer with creamed mixture.
  • Step #8 Puree until very, very smooth.
  • Step #9 Pour the watercress cream into a bowl.
  • Step #10 To eat, dip a salmon roll or oyster first into the watercress cream, then into the bacon bits.
