Ingredients
  • 10 oz frozen sliced spinach, thawed & squeezed dry .
  • 1/4 c carrots, finely grated .
  • 1 loaf pumpernickel bread, round .
  • 8 oz canned water chestnuts, drained & sliced .
  • 1/2 c fat-free mayonnaise .
  • 1/2 tsp fresh lemon juice .
  • 1 (1 2/3 oz) packet vegetable soup mix .
  • 16 oz nonfat sour cream

Directions
  • Step #1 In a medium bowl, mix soup mix, sour cream, mayonnaise & lemon juice.
  • Step #2 Stir in spinach, carrots & water chestnuts; chill in the fridge.
  • Step #3 To serve, hallow out a the loaf of bread, by cutting a circle in the center of it.
  • Step #4 Cut up remaining bread into 1-inch cubes.
  • Step #5 Fill with dip.
  • Step #6 Yields about 1/4 c of dip & 2 bread cubes per serving.
