Stovetop Margarita Chicken With Fresh Corn Relish Recipe

Ingredients
  • 3 large ears of corn (cooked & cut off cob) .
  • 1 small red bell pepper (sliced finely) .
  • 1 large lime, juice of .
  • 2 c margarita mix (use your favorite brand) .
  • Corn Relish Ingredients .
  • 1 fresh jalapeno pepper (seeded & minced) .
  • 3 tbsps butter .
  • 1 c tequila .
  • 1/4 c fresh cilantro (sliced finely) .
  • 1 large fresh jalapeno (seeded & minced) .
  • 1/4 tsp lime zest .
  • 3 garlic cloves (smashed) .
  • 1 large lime (sliced thinly for garnish) .
  • Marinade Ingredients .
  • 4 boneless chicken breasts .
  • 1 small red onion (minced) .
  • 1/4 tsp Tabasco sauce

Directions
  • Step #1 Mix together all marinade ingredients In a large-ish zip-top bag.
  • Step #2 Spice up with salt & pepper to taste, & add chicken breasts.
  • Step #3 Marinate chicken overnight, or at least 8 hrs.
  • Step #4 When ready to cook, heat butter In a large-ish skillet.
  • Step #5 Add chicken breasts & brown for 5-6 mins per side.
  • Step #6 Pour in about 1/2 c of the marinade, until chicken is done, & cook over med-heat/flame for about 15-20 mins,cover, checking & turning chicken once, halfway through.
  • Step #7 Meanwhile, mix together corn relish ingredients, & stir well to mix.
  • Step #8 When chicken is done, or on the side, over the top of all, place on a serving platter, with the corn relish, however you prefer.
  • Step #9 Garnish with lime slices.
