Paprika Gravy Recipe

Ingredients
  • 1 garlic clove, peeled anc sliced .
  • salt & freshly ground black pepper .
  • 1 tbsp freshly rendered lard or oil .
  • 1 c sour cream .
  • 3/4 c all-purpose flour .
  • 1 1/2 tbsps Hungarian paprika (to taste) .
  • 6 c beef stock .
  • 1 c anaheim green peppers, seeded & sliced or cubanelle peppers, sliced but not seeded .
  • 1 tsp chicken base or chicken bouillon .
  • 1/2 c sliced ripe tomatoes .
  • 1 c yellow onions, peeled & sliced

Directions
  • Step #1 Heat a 5-quart heave stove-top casserole & add the lard & paprika.
  • Step #2 Cook over med-heat/flame for a moment & then add the garlic, green pepper, onion & tomatoes.
  • Step #3 Simmer for a few mins until all is tender.
  • Step #4 Add the chicken base & Beef Stock, along with salt & pepper.
  • Step #5 Cover up & let simmer for 30 mins.
  • Step #6 In a metal bowl, mix the sour cream & flour together.
  • Step #7 Mix it well with a wire whip as you do not want lumps.
  • Step #8 Add a c of the gravy from the pot & quickly stir it into the cream & flour with the whisk.
  • Step #9 Remove the gravy from the heat & stir in the the cream mixutre, whipping it well.
  • Step #10 Return to the heat & let simmer, stirring often, for 15 mins.
  • Step #11 Strain the gravy & discard the solids -- or lumps, if you have any.
