Roasted Garlic & Spinach Spirals Recipe

Ingredients
  • 3 c fresh spinach leaves .
  • 1 tsp dried oregano .
  • 1 head fresh garlic .
  • 1/4 tsp black pepper .
  • 1/8 tsp ground red pepper .
  • 7 (7 inch) flour tortillas .
  • 1 (15 oz) can white beans, rinsed & drained

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Trim top of garlic just enough to cut tips off center cloves; discard tips.
  • Step #3 Moisten head of garlic with water; wrap in foil wrap.
  • Step #4 Bake 45 mins or until garlic is soft & has a mellow garlicky aroma; cool.
  • Step #5 Remove garlic from skin by squeezing between fingers & thumb; place this in food processor/blender.
  • Step #6 Rinse spinach leaves; pat dry with paper towels.
  • Step #7 Remove stems; discard.
  • Step #8 finely shred leaves by stacking & cutting several leaves at a time.
  • Step #9 Place in medium bowl.
  • Step #10 Add bean, oregano, black pepper & red pepper to food processor/blender; process until smooth.
  • Step #11 Add spinach; mix well.
  • Step #12 Spread mixture evenly onto tortillas; roll up.
  • Step #13 Trim 1/2 inch off ends of rolls; discard.
  • Step #14 cut rolls into 1-inch pieces.
  • Step #15 Transfer to serving plate; garnish with fresh veggies if desired.
