Vegetable Frittata Recipe

Ingredients
  • 1 tsp pepper .
  • 1/2 c red onions, sliced .
  • 1 tsp salt .
  • 1 quart fat free egg substitute .
  • 1 tsp garlic salt (optional) .
  • 16 oz shredded fat-free cheddar cheese .
  • 1 tsp paprika .
  • 1/2 c red bell peppers, sliced .
  • 2/3 c chunky salsa, extra thick .
  • 1 lb broccoli, sliced & steamed .
  • 1 c panko

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Mix all ingredients (except for the Panko bread crumbs--they go on top).
  • Step #3 Pour into a 9x13 glass baking dish sprayed with a non stick spray.
  • Step #4 Bake for 30 to 40 mins or until eggs are set.
