Bluebarb Coffee Cake Recipe

Ingredients
  • 1/4 c firm butter or margarine .
  • 1/4 c shortening .
  • 3/4 c granulated sugar .
  • 1/2 tsp ground cinnamon .
  • vanilla glaze .
  • 3/4 tsp salt .
  • 3/4 c milk .
  • crumb topping .
  • 1/3 c Gold Medal all-purpose flour .
  • coffee cake .
  • 1 c blueberries (fresh or frozen) .
  • 1/4 tsp vanilla .
  • 2 c Gold Medal all-purpose flour .
  • 1/2 c granulated sugar .
  • 2 1/2 tsps baking powder .
  • 1/2 c powdered sugar .
  • 1 c sliced rhubarb (fresh or frozen( thawed & drained) .
  • 1 egg .
  • 1 1/2-2 tsps hot water

Directions
  • Step #1 Heat oven to 375°F Grease bottom & side of 9-inch springform pan or 9-inch square pan with shortening or cooking spray.
  • Step #2 In small bowl, mix 1/2 c granulated sugar, 1/3 c flour & the cinnamon.
  • Step #3 Cut in butter, using pastry mixer (or pulling 2 table knives through ingredients in opposite directions), until crumbly; set aside.
  • Step #4 In large bowl, mix all coffee cake ingredients except blueberries & rhubarb; beat with spoon 30 seconds.
  • Step #5 Fold in blueberries & rhubarb.
  • Step #6 Spread in pan.
  • Step #7 Sprinkle top with topping.
  • Step #8 Bake 45 to 50 mins or until toothpick inserted in center of cake (not fruit) comes out clean.
  • Step #9 Cool 10 mins.
  • Step #10 Remove from pan if desired.
  • Step #11 In small bowl, mix all glaze ingredients until smooth & thin enough to drizzle.
  • Step #12 Drizzle glaze over warm coffee cake.
  • Step #13 Serve warm, if desired.
