garlic cloves (peeled & sliced in half, use as many as you wish) .

Directions
Step #1 Cut small slits in the roast all over, then stuff with garlic clove halves (as many as you wish).
Step #2 Place in a shallow glass pan cover with plastic wrap & put in the fridge for 8-24 hrs to allow garlic to infuse in the meat.
Step #3 Remove from the fridge & allow to sit for 1-1/2 hrs or just until the meat is almost room temperature (this might take more than 1-1/2 hrs).
Step #4 Set oven to 375 degrees.
Step #5 Place the roast in a small or medium-size oval roasting pan with a fitted lid.
Step #6 In a small c or bowl mix together 4 tbsps flour with 1-1-/2 tbsps salt, 2 tsps Italian seasoning, garlic powder & 1 tsp black pepper.
Step #7 Sprinkle top the flour/seasoning mix all over the roast.
Step #8 Pour 2 c water & the vinegar into the bottom of the roasting pan.
Step #9 Add in the onion & whole garlic cloves.
Step #10 Drizzle the pork evenly with hot sauce.
Step #11 Cover up with the lid & cook for 3-1/2 hrs or until very tender.
Step #12 Remove pork from the roasting pan & wrap tightly in foil wrap.
Step #13 Pour 1 c pan drippings into a 2-c pyrex measuring c; let this stand 10 mins, then skim off the fat from the top of the glass.
Step #14 Melt butter In a large-ish skillet over medium-high; whisk in the remaining 2 tbsps flour, red wine & 1/2 tsp Italian seasoning; bring to a boil, whisking constantly, broth, the pan drippings, then reduce heat to medium & let simmer for about 10 mins.
Step #15 Spice up gravy with black pepper.
Step #16 Serve the gravy with the roast.
