Balsamic Glazed Fruit (michael Chiarello) Recipe

Ingredients
  • 4 large apples .
  • 1/3 c balsamic vinegar .
  • 1/3 c brown sugar .
  • 2 bay leaves .
  • 5 tbsps fresh lemon juice, divided .
  • 2 large pears .
  • 1 tsp fresh rosemary, finely sliced .
  • 3 tbsps butter

Directions
  • Step #1 Preheat oven to 250 degrees.
  • Step #2 Peel & core apples & pears, cut each into 8 wedges.
  • Step #3 Place in large bowl & toss with 2 T.
  • Step #4 lemon juice.
  • Step #5 Melt butter over med-heat/flame in skillet until it stops foaming & is slightly brown.
  • Step #6 Add rosemary, bay leaves, remaining 3 T.
  • Step #7 lemon juice, balsamic vinegar, & brown sugar.
  • Step #8 Heat to boiling & reduce slightly.
  • Step #9 Pour over fruit & toss to coat.
  • Step #10 Pour into roasting pan or onto a cookie sheet WITH SIDES.
  • Step #11 Bake for 3-8 hrs, turning each hr.
  • Step #12 Fruit should be slightly dried, but not dried to the extent of fruit leather.
  • Step #13 Store tightly covered in refrigerator for up to one week.
