Ingredients
3 eggs or 3/4 c Egg Beaters egg substitute .
1 c sugar or Splenda granular .
6 oz bittersweet chocolate or semisweet chocolate .
2 tsps anise seed (or more to taste) .
2 tsps vegetable oil .
1/4 tsp salt .
1 c sliced almonds .
2 tsps pure vanilla extract .
2 1/2 c flour .
2 tsps baking powder
Directions
Step #1 Preheat oven to 350°F Mix flour, sugar, anise seed, baking powder, almonds & salt in large bowl.
Step #2 Beat eggs & vanilla in separate bowl.
Step #3 Gradually add to dry ingredients, mixing just until the dough resembles wet sand.
Step #4 Do not over mix.
Step #5 Divide dough in half.
Step #6 Roll each half into a 12-inch long log.
Step #7 Transfer logs to greased baking sheet.
Step #8 Flatten log to 1-inch thickness.
Step #9 Bake 30 mins or until slightly risen & firm to touch.
Step #10 Cool logs on wire rack 15 mins.
Step #11 Transfer to cutting board.
Step #12 Using a sharp serrated knife, cut logs diagonally into 3/4-inch thick slices.
Step #13 Place slices in single layer on ungreased baking sheets.
Step #14 Bake 10 to 13 mins or until crisp & golden.
Step #15 Cool on baking sheets.
Step #16 Place chocolate & oil in small microwaveable bowl.
Step #17 Microwave on HIGH 1 min.
Step #18 Stir; microwave extra 30 seconds.
Step #19 Microwave extra 30 seconds, if needed.
Step #20 Stir until completely melted.
Step #21 Dip each biscotti halfway into chocolate mixture.
Step #22 Let stand at about room temp or put in the fridge on wax paper-lined tray 15 mins or until chocolate hardens.
Step #23 Store in covered container.
