Oven Baked Sweet Potato & Chicken Risotto Recipe

Ingredients
  • 2 c arborio rice .
  • 2 tbsps butter .
  • 2 tsps sliced fresh thyme .
  • 2 c sliced cooked chicken .
  • 1/2 c grated parmesan cheese .
  • salt & pepper .
  • 700 g sliced sweet potatoes .
  • 5 c chicken stock

Directions
  • Step #1 Preheat oven 190°C.
  • Step #2 Put rice, sweet potato, stock & butter in oven proof dish.
  • Step #3 Seal with foil wrap or place on a well fitting lid.
  • Step #4 Cook for 30 mins, then check & stir.
  • Step #5 Cook further 5 mins.
  • Step #6 Remove, thyme, cheese, add chicken, salt & pepper & stir until creamy.
  • Step #7 Serve as soon as possible.
