- 2 tbsps butter .
- 2 tsps sliced fresh thyme .
- 2 c sliced cooked chicken .
- 1/2 c grated parmesan cheese .
- salt & pepper .
- 700 g sliced sweet potatoes .
- 5 c chicken stock
Directions
- Step #1 Preheat oven 190°C.
- Step #2 Put rice, sweet potato, stock & butter in oven proof dish.
- Step #3 Seal with foil wrap or place on a well fitting lid.
- Step #4 Cook for 30 mins, then check & stir.
- Step #5 Cook further 5 mins.
- Step #6 Remove, thyme, cheese, add chicken, salt & pepper & stir until creamy.
- Step #7 Serve as soon as possible.
