Spicy Two-bean Chili Recipe

Ingredients
  • hot cooked rice (optional) .
  • 3 large onions, sliced .
  • shredded cheddar cheese .
  • 1/2 tsp white pepper .
  • 2 (15 oz) cans black beans, rinsed & drained .
  • 1/2 c lime juice .
  • 6 garlic cloves, minced .
  • 1 (14 1/2 oz) can chicken broth .
  • 2 tsps salt .
  • 1/4 c chili powder .
  • 1/2 tsp paprika .
  • 1/2 tsp pepper .
  • 6 tbsps cornmeal .
  • 2 tsps rubbed sage .
  • 3 tsps ground cumin .
  • 2 lbs ground beef .
  • 2 (16 oz) cans kidney beans, rinsed & drained .
  • 2 (10 oz) cans sliced tomatoes & green chilies, undrained .
  • 4 tsps dried oregano

Directions
  • Step #1 In a Dutch oven, cook the beef, onions & garlic over med-heat/flame until meat is no longer pink; drain.
  • Step #2 Transfer to a 5-qt.
  • Step #3 slow cooker (aka crockpot).
  • Step #4 Stir in the beans, lime juice, tomatoes, broth, cornmeal & seasonings.
  • Step #5 Cover up & cook on low for approximately 8 hrs.
  • Step #6 Serve over rice (optional); sprinkle with cheese.
