1 c shredded granny smith apples (about 2 small) .
1/2 tsp salt
Directions
Step #1 Preheat oven to 375°.
Step #2 Grease a large muffin tin (I use my "Texas" sized muffin pan).
Step #3 In a medium bowl mix flour, baking powder, salt, sugar, baking soda, & cinnamon & mix to mix.
Step #4 In another bowl add wheat bran & milk & mix well.
Step #5 Then to the bran mixture add eggs, apple butter & 2 tbsp oil & mix to mix.
Step #6 Let bran mixture sit 5-10 mins.
Step #7 Meanwhile, peel, core & shred the apples.
Step #8 Squeeze out any excess moisture from apples with your hands.
Step #9 Add shredded apples to the bran mixture & mix well to mix.
Step #10 Add wheat bran mixture to flour mixture & stir this to mix (batter will be thick).
Step #11 Spoon batter into muffin c evenly.
Step #12 Bake at 375° for 25-30 mins or until they just begin to brown & test done with a toothpick.
Step #13 Cool muffins in pan on a wire rack 5-10 mins.
Step #14 Remove muffins from muffin pan & cool completely.
Step #15 *** Preparation time includes preparing the apples.
Step #16 You can make 12 standard size muffins instead of six large but you'll need to reduce baking time to approximately 15-20 mins or until they test done.
