Crispy Potato Wedges Recipe

Ingredients
  • 6 large russet potatoes .
  • 1 tsp fresh coarse ground black pepper .
  • 1 tsp salt .
  • 2 tsps sweet paprika .
  • 1/4 c butter .
  • 1 1/2 c panko (Japanese breadcrumbs)

Directions
  • Step #1 Cook potatoes In a large-ish pot of boiling salted water just just tender, about 25 mins.
  • Step #2 Drain & cool.
  • Step #3 Can make 1 day ahead & chill in the fridge.
  • Step #4 Peel potatoes & cut each into 6 long wedges.
  • Step #5 Melt butter in large skillet; remove this from heat.
  • Step #6 Mix paprika, salt, & pepper.
  • Step #7 Roll each potato wedge in seasoned butter to coat.
  • Step #8 Place potatoes on large rimmed baking sheet.
  • Step #9 Add 1 1/2 c panko to butter in skillet & stir until crumbs are evenly coated.
  • Step #10 Roll potatoes in crumb mixture, pressing crumbs to adhere.
  • Step #11 Return potatoes to same baking sheet.
  • Step #12 Preheat oven to 350 degrees.
  • Step #13 Bake potatoes uncovered until heated through & crumb coating is crisp, about 45 mins.
  • Step #14 Arrange on platter.
