Breast Of Chicken Flambe With Brandied Cherry Sauce 4-2 Recipe

Ingredients
  • Bing Cherry Sauce .
  • 2 (8 oz) chicken breasts (with bone & skin) .
  • 1-2 tsp cornstarch (depending on desired thickness) .
  • 1 pinch salt .
  • 1 (8 oz) can black bing cherries .
  • 1 tsp paprika .
  • 2 tbsps sugar .
  • 1 pinch salt, to taste .
  • 1 oz melted butter .
  • 2 tbsps Burgundy wine .
  • 1 oz cherry brandy .
  • 1 pinch white pepper, to taste

Directions
  • Step #1 Preparing Bing Cherry Sauce:.
  • Step #2 Drain juice from cherries.
  • Step #3 Combine juice with wine, cornstarch, sugar, & salt; mix thoroughly.
  • Step #4 Bring mixture to a boil until sauce thickens.
  • Step #5 Remove from heat.
  • Step #6 Stir in the drained cherries.
  • Step #7 Spice up chicken breast with salt, paprika, white pepper, & brush with butter.
  • Step #8 Bake for 30 mins at 325°F or until cooked & tender.
  • Step #9 Place chicken in a medium size ovenproof serving dish & cover with sauce.
  • Step #10 Have table set, candles lit, all accompaniments on table, & turn off lights when ready to flambé.
  • Step #11 HOW TO FLAMBE:.
  • Step #12 Pour 1/4 oz of brandy over dish & place this in middle of table.
  • Step #13 Using long wooden matches, ignite chicken breast.
  • Step #14 When flame goes out & liquor has burned off, you are ready to serve.
