Pork Salad With Cabbage Slaw Recipe

Ingredients
  • 1 tbsp honey .
  • 1/4 tsp cracked black pepper .
  • 1/4 tsp ground nutmeg .
  • 1 c apples, coarsely sliced .
  • 1 tsp caraway seeds .
  • 2 tsps honey mustard .
  • 2 boneless pork loin chops (1 1/2 inch thick) .
  • 3 c coleslaw mix .
  • 2 slices turkey bacon (or bacon) .
  • 1/3 c apple juice .
  • 1/3 c cider vinegar

Directions
  • Step #1 Sprinkle top pork with pepper & nutmeg.
  • Step #2 Place meat on the unheated rack of broiler pan.
  • Step #3 Broil 4 to 5 inches from the heat for 18 to 25 mins or until no pink remains & juices run clear, turning the meat once during cooking.
  • Step #4 Meanwhile, In a large-ish bowl mix coleslaw mix & apple, set aside.
  • Step #5 In a medium skillet cook bacon slices until crisp.
  • Step #6 Drain & crumble bacon, set aside.
  • Step #7 Add vinegar, honey, apple juice, mustard & craway seed to skillet.
  • Step #8 Bring to boiling.
  • Step #9 Pour over coleslaw mixture; add crumbled bacon.
  • Step #10 Toss to mix.
  • Step #11 Arrange coleslaw mixture on individual serving plates.
  • Step #12 Cut pork into 1/4 inch thick slices.
  • Step #13 Arrange pork slices on coleslaw mixture.
  • Step #14 Garnish with extra apple slices if so desired.
