Mexi Chicken Stew Recipe

Ingredients
  • 2 tsps cumin .
  • 4 medium potatoes, peeled & cut very small .
  • hot cooked rice (optional) .
  • 1 (15 oz) jar mild salsa, can use hot if you can take it .
  • 1 (15 oz) can tomato sauce .
  • 1/4-1/2 tsp chili powder .
  • 1 c frozen corn, can use canned .
  • 1/2 c light sour cream .
  • 2-2 1/2 lbs boneless skinless chicken breasts, cut into about 1 1/2-inch peices .
  • 1 (4 oz) can sliced green chilies .
  • 1-2 tbsp sliced fresh cilantro .
  • 1/2 tsp garlic powder .
  • 1 c sliced onions .
  • 1 c shredded cheddar cheese .
  • warm flour tortillas (optional)

Directions
  • Step #1 Place chicken pieces in bottom of the slowcooker.
  • Step #2 Add all remaining ingredients EXCEPT the shredded cheese.
  • Step #3 Cover up & cook on low for about 7 hrs.
  • Step #4 Stir in the shredded cheese.
  • Step #5 Cover up for about 15 mins to let melt.
  • Step #6 STir again.
  • Step #7 Serve with warm tortillas or over rice.
