1 c beef stock, liqud stock or 1 1/2 c chicken stock, liqud stock .
1/8 tsp ground black pepper .
2 small onions, sliced .
1 stalk celery, sliced .
3 tsps plain flour (optional)
Directions
Step #1 Trim all excess fat from the roast.
Step #2 Combine 1/4 c flour, salt & pepper on a flat plate.
Step #3 Coat meat with the flour mixture.
Step #4 Heat large pan with oil & brown the beef.
Step #5 Place onion & celery in slow cooker (aka crockpot), then pour in the liquid stock & top this with roast (cut roast in half if it's unable to fit),.
Step #6 Cover up & cook on low setting for 8-10 hrs.
Step #7 Depending on how well you enjoy the beef.
Step #8 Remove beef from the slow cooker (aka crockpot) & allow to sit until you make the gravy (about 10 mins).
Step #9 To make gravy pour all the juices from the slow cooker (aka crockpot) into a pot & puree with a hand wand.
Step #10 Put the meat juices on a very low heat on the stove top.
Step #11 In a separate bowl mix flour & water until liquid paste.
Step #12 Slowly add the flour & water mixture into the gravy pot, mix the gravy until it thickens.
Step #13 Slice beef & serve this with roasted root vegetables & gravy.
