Best Ever Low Carb Cheesecake Recipe

Ingredients
  • 2 lbs cream cheese (not light, it has more carbs!) .
  • 1 c Splenda granular (or use the equivalent sweetening power of your favourite sugar substitute...liquid splenda lowers th) .
  • 1 tsp vanilla .
  • 4 eggs .
  • 1 egg yolk .
  • 2/3 c regular sour cream .
  • 1 tbsp lemon juice

Directions
  • Step #1 Preheat oven to 300F degrees.
  • Step #2 Cream softened cream cheese with splenda until very smooth.
  • Step #3 Blend in sour cream, vanilla, & lemon juice.
  • Step #4 Add eggs one at a time & beat until smooth but don't overbeat.
  • Step #5 Pour mixture into an 8 or 9 inch springform pan & wrap bottom & sides of pan with tin foil wrap to form a watertight barrier.
  • Step #6 Set pan in larger pan (I use a big roaster) & add water to about half way up the springform.
  • Step #7 Place into oven & cook 1 hr.
  • Step #8 Reduce heat to 200 & cook another hr.
  • Step #9 Cool slowly at either room temp or it is actually best to turn off the oven & leave the cheesecake in it overnight to cool.
  • Step #10 (Cheesecakes most often crack due to overbeating & cooling too rapidly).
  • Step #11 Place in fridge for several hrs before serving.
  • Step #12 Top with your favourite fresh fruit if desired & whipped cream.
