Lemon Poppy Seed Muffins Recipe

Ingredients
  • 1 tbsp fresh lemon juice .
  • 1/4 c confectioners' sugar, plus .
  • 1 tsp finely grated fresh lemon rind .
  • 1/2 c milk .
  • 1/2 c butter .
  • 2 tsps baking powder .
  • 2 tbsps confectioners' sugar .
  • 2 c flour .
  • MUFFINS .
  • LEMON GLAZE .
  • 1/8 tsp almond flavoring .
  • 2 eggs .
  • 1/4 tsp vanilla .
  • 2/3 c sugar .
  • 4 tsps poppy seeds .
  • 1/4 tsp salt .
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 In a bowl mix the flour, powder, & salt; set aside.
  • Step #2 With an electric mixer mix the butter, sugar, lemon rind, & lemon juice; cream till light & fluffy--about 2 mins.
  • Step #3 Add eggs, one at a time beating well after each addition.
  • Step #4 Stir in poppy seeds.
  • Step #5 Fold in the flour mixture alternately with the milk.
  • Step #6 Do not overmix the batter.
  • Step #7 Put in paper-lined tins.
  • Step #8 Bake at 375 dgrees for about 25 mins.
  • Step #9 GLAZE: While baking, mix the confectioners sugar with the lemon juice, vanilla, & almond.
  • Step #10 When the muffins come out of the oven generously brush each one with the lemon glaze; remove this from pan & put on rack to cool for 10 mins before serving.
