3 tbsps butter (to be mixed with remaining half of the streusel mixture for top of cake) .
1 1/4 c flour .
1 tsp nutmeg .
3/4 c sugar .
1 1/2 c sliced walnuts .
STREUSEL .
1 tbsp grated lemon zest .
1 tbsp vanilla (or use 2 tsps alond extract) .
1 1/2 c blueberries .
1 c light brown sugar .
2 tsps cinnamon (can use less cinnamon) .
1 tsp baking powder
Directions
Step #1 Set oven to 350 degrees.
Step #2 Set oven rack to second-lowest position.
Step #3 Grease an 8 x 8-inch baking dish.
Step #4 In a small bowl mix together brown sugar, cinnamon & nutmeg until mixd; set aside.
Step #5 In a large bowl using an electric mixer on medium speed beat butter with sugar for about 3 mins.
Step #6 Beat in eggs & vanilla until mixd.
Step #7 in a medium bowl mix together flour with baking powder, salt & lemon zest; add to the creamed mixture along with the yogurt mixing on lowish speed or with a wooden spoon just until mixd.
Step #8 Mix in blueberries until just mixd.
Step #9 Pour HALF of the cake batter into prepared baking dish, then sprinkle with HALF of the streusel mixture.
Step #10 Pour the remaining HALF of the cake batter over streusel.
Step #11 In a bowl mix the remaining HALF of streusel mixture with 3 tbsps soft butter then sprinkle it over the cake batter.
Step #12 Bake for about 40-45 mins or until cake tests done.
