Chicken Breasts Glazed With Hot Pepper Jelly Recipe

Ingredients
  • 2 tbsps hot pepper jelly .
  • 1/2 tsp Dijon mustard .
  • 2 tbsps unsalted butter .
  • 1 tbsp celery leaves, coarsely sliced .
  • 2 medium celery ribs, cut into 2-inch-long matchsticks .
  • 1 tbsp fresh lemon juice .
  • 2 1/2 lbs boneless chicken breast halves, lbed lightly to an even thickness

Directions
  • Step #1 In a small bowl, mix the pepper jelly & mustard; set aside.
  • Step #2 Spice up the chicken breasts on both sides with salt & pepper.
  • Step #3 In a large skillet, melt the butter over moderately high heat.
  • Step #4 When the foam subsides, until browned, turning once, add the chicken breasts & cook, about 3 mins per side.
  • Step #5 Tilt the skillet & pour off most of the fat.
  • Step #6 Add 1 tbsp of water & shake the pan to loosen the browned bits on the bottom.
  • Step #7 Push the chicken to one side, stirring, add the celery matchsticks & cook, for 1 min.
  • Step #8 Add the pepper jelly mixture & the lemon juice to the pan & shake to coat the chicken with the sauce.
  • Step #9 Cook until the sauce is reduced to a glaze, about 30 seconds.
  • Step #10 Spice up with salt & pepper.
  • Step #11 Transfer the chicken to plates & spoon the celery matchsticks on top.
  • Step #12 Garnish with the celery leaves & serve at once.
