Creamy Parmesan Polenta Recipe

Ingredients
  • 1 c yellow cornmeal .
  • 1/4 c whipping cream .
  • 1 c grated parmesan cheese .
  • 1 1/2 c water .
  • 2 tbsps butter (1/4 stick) .
  • 2 1/2 c canned low sodium chicken broth

Directions
  • Step #1 Combine water & cornmeal in small bowl.
  • Step #2 Bring broth to boil in heavy large saucepan.
  • Step #3 Gradually add cornmeal mixture, stirring until well mixed.
  • Step #4 Reduce heat to low & let simmer until polenta is very thick, stirring every once in awhile, about 15 mins.
  • Step #5 Mix in 1/2 c cheese, cream & butter.
  • Step #6 Spice up to taste with salt & pepper.
  • Step #7 Transfer polenta to serving bowl.
  • Step #8 Sprinkle top remaining 1/2 c cheese over.
