Ingredients
  • 1 tb Vanilla extract
  • 2 c Milk
  • --CUSTARD-----
  • 3 Egg yolks; slightly beaten
  • 2 tb Cornstarch
  • 1/3 c Sugar

Directions
  • Step #1 -TURNOVERS---- 4 md Baking apples; peeled, -sliced 1 tb Lemon juice 2 tb Butter or margarine; sliced 1/3 c Sugar 3/4 ts Cinnamon 1 tb Cornstarch Pie crust; (9 inch), double ; crust Milk mix sugar & cornstarch in a saucepan.
  • Step #2 stir in the milk until smooth.
  • Step #3 Cook & stir over medium-high heat until thickened and bubbly.
  • Step #4 Reduce heat; cook & stir for 2 mins.
  • Step #5 remove this from heat; stir in the 1 c into yolks.
  • Step #6 Return all to pan.
  • Step #7 Bring to a gentle boil; cook & stir for 2 mins.
  • Step #8 remove this from heat; stir in the vanilla.
  • Step #9 Cool slightly.
  • Step #10 Cover surface of custard with waxed paper; chill.
  • Step #11 Plac apples in a bowl; Sprinkle top with lemon juice.
  • Step #12 Add butter.
  • Step #13 mix sugar, cinnamon & cornstarch; mix with apples & set aside.
  • Step #14 Divide pastry into 8 portions; roll each into a 5 inch square.
  • Step #15 Spoon filling off-center on each.
  • Step #16 Brush edges with milk.
  • Step #17 Fold over to form a triangle; seal.
  • Step #18 Crimp with tines of fork.
  • Step #19 Make steam vents in top.
  • Step #20 Place on greased baking sheets.
  • Step #21 Chill 15 mins.
  • Step #22 Brush with milk.
  • Step #23 bake this at 400F for 35 mins.
  • Step #24 Serve warm with custard.
